Time to quickly get creative for my lunch today! Yesterday we got tomatoes, basil, and zucchini from our CSA. Bam. Lunch today. I am SO loving all this local fresh food!!
This is super quick to make in the mornings and deliciously fresh! You can also add some chicken, tuna, or garbanzo beans for protein
Tomato Basil Balsamic Salad
1 serving
1 small zucchini, chopped
1 cup tomatoes (any kind), diced
2 Tbsp chopped fresh Basil
1-2 Tbsp organic Balsamic Vinegar
1/2 Tbsp Extra Virgin Olive Oil
Himalayan salt and black pepper to taste
Fresh squeeze of lemon
3 oz chicken, tuna, or beans
Dice it, mix it, and you’re done! Enjoy! I know I will!
