Here’s a healthy and savory chili recipe that will keep you nourished during the upcoming winter…err…spring storm. I cooked up a batch this afternoon that we’ll have for the week. I also froze some for when we need a quick meal, now that’s my kind of frozen dinner!
This chili is loaded with veggies and can be made with or without meat. The tomatoes I used were a fun find from my freezer: last summer I had frozen 2 bags of chopped tomatoes and was looking for a use, and this chili was the perfect match! Fresh tomatoes give this chili a special touch and if you can muster up the endurance to chop up a vat of them I highly recommend it!
