Simply Vanilla Ice Cream (Dairy Free)

All you need is a blender and a few simple ingredients to create a healthier ice cream at home! This makes a great dessert on its own or a la mode with another dessert!

  • 1 can coconut milk full fat
  • 1 1/2 coconut or almond milk
  • 2 1/2 frozen bananas very ripe
  • 1 tbsp. vanilla extract
  • 1-2 tbsp. honey more or less to taste
  • Himalayan or sea salt just a dash


  • Place all ingredients into the Vitamix or other high-powered blender
  • Process for 30 seconds-1 minute until contents are completely smooth
  • Transfer ingredients to an ice cream maker and process for 20-25 minutes, or until ice cream reaches desired texture.


If you do not have an ice cream maker, freeze the mixture in a bowl for 1-2 hours, stirring occasionally, until desired consistency is reached; make sure the bananas you use are frozen.
